This restaurant is a gastronomic wonder. It has a panoramic glass ceiling, a gray-and-green translucent dome designed by Gustav Eiffel, the architect who conceived the famous tower. Chef Eric Brifford keeps the crowds lined up. Menu items focus on Provençal models and change every 2 months, based on whatever is fresh. That might be the Landes duck foie gras for starters (a touch of ginger is added). The blue lobster is salt cooked and aromatic with spices and served with lemon gnocchi. Other delights are the young pigeon with a five-spice glaze and tamarind jus. Candles illuminate the place; during dinner, live piano music reverberates off the dome.
