Not far from Piazza Signoria, L'Antico Trippaio is one of the very few food stalls still selling a typical Florentine delicacy: the panino con il lampredotto dressed either with spicy or green sauce (lampredotto is the offal cut of the cow, stewed and served inside a bread roll dipped in broth). Once upon the time this was the simple lunch of working classes sold on the street near their handcraft labs. Nowadays everybody eats it! For those not yet ready for this classical Tuscan street food, L'Antico Trippaio also has a great selection of paniniw made with different kinds of breads and focaccia. They also sell water and soft drinks to wash everything down. - Maria Frullini
