Food is treated as art at this high-ticket Japanese restaurant in the Renaissance Wailea. The presentation of sushi, Teppanyaki and even tempura (a fairly unlovely deep-fried dish) is superb. Skilled sushi chefs arrange each piece of fish, foliage and flatware with an eye for drama, making a simple dish such as six pieces of raw tuna look like a museum piece. Prices are high. The decor is sophisticated and understated in the Eastern manner.
